Our Sunday morning pancake routine is devine. Especially since it's February and we are still in winter hibernation mode here in Hoboken. Is there anything better than a lazy Sunday with pj's and pancakes?!
We've been making these Dreamy Oatmeal Cakes for quite some time now and I could seriously have them daily! They are that good.
With a very simple ingredient list, I'm sure you all could actually make these after reading this post. You probably have everything you need. Here's to an easy any day pancake treat. Go ahead and give these warm, delicious pancakes a try.
Dreamy Banana Oatmeal Pancakes:
yields: 10-12 pancakes
prep time: 5-15 minutes
cook time: 10 minutes
Ingredients: adapted from ellentv.com
1 1/2 cups of non-dairy milk (I usually use unsweetened almond)
1 cup of steel cut oatmeal (quick cook or regular)
2 medium size ripe bananas
1/2 cup of oat flour
1/2 teaspoon of salt
1 tablespoon, plus 1 teaspoon of baking powder
vegan butter or non-stick cooking spray as needed
In a blender or food processor, puree the oats and nondairy milk until smooth. Add in the bananas, flour, salt and baking powder and puree for a few seconds, until the ingredients are combined. Scraping down the sides if needed. Allow the batter to rest for at least 10 minutes, if not more.
Chef note: The longer I let this batter sit, the better the pancakes, fluffy and perfect. If you make the batter early, it can be kept in the fridge and enjoyed later in the morning.
I even enjoy the leftovers as a quick pancake on-the-go with almond butter and more banana slices.
