My work, the Kentucky Derby fresh mint bouquets and my friend Niambi inspired me to create this beautiful berry parfait for an Urban Garden Party we had at Luxe in Hoboken a few weeks back.
All she said was...blackberries and left the rest up to me. The idea came to me one sunny spring morning as soon as I opened my eyes and these creamy, crunchy parfaits were born.
If you've been following me for awhile and/or you're into health, you're no stranger to chia seed pudding, however, this is a serious upgrade.
Delight in the power and energy of spring with this creamy whole food berry dessert.
Blackberry Mint Chia Seed Parfait

prep time: 5-10 mins servings: 4-6
1/2 cup of chia seeds
2 cups filtered water
1/2 cup unsweetened almond milk
4-5 dates, pitted and soaked (for 5 minutes or so)
1 ripe banana
2 tablespoons honey (optional)
1 pint of fresh blackberries
1/4 cup of silvered almonds
1/2 cup of low-sugar granola
additional drizzle of honey
garnish with fresh mint
Combine the chia seeds and water in a small mixing bowl. Allow to sit for about 30 minutes. They will become gelatinous.
In a high-powered blender combine and mix the soaked chia seeds, dates, banana, almond milk until smooth. In a pretty parfait glass layer the fresh blackberries, chia seed pudding, granola, almonds. Garnish with fresh mint and get ready to smile. This is a the ultimate guiltless dessert. Enjoy!
Chef note: no blender needed, simply combine ingredients, layer and serve.
