We got lots of fresh air and camped out in the woods near the Delaware Water Gap area of New Jersey. This is our seventh year camping and we all really enjoy being together and recharging our batteries out of the city.
What's missing from this photo is all the meat that was on the other side of the grill. I'm the only plant-based gal in this entire group but each year it gets easier and easier to still honor the way I live while enjoying and respecting everyone else around me.
My brussel sprout pops originally were meant to be kabobs, however with no power tools in the woods, to core through the hard little cabbage heads, they quickly became veggie pops. The kids were actually excited to try them-this made me smile. And they tasted delicious. I started them on the grilled and finished them in a foil packet to steam through and get tender.
It was so wonderful to be out in the woods. Peaceful, relaxing and quiet. I always enjoy starting my summer that way. It connects me back to nature. I can quiet my mind, get grounded and wake up to trees, birds and deer.
If you've never been camping, start off small, maybe rent a cabin in the woods and work your way back to a tent (or not...it might not be your style). However, it's so much fun to do with a group of family and friends.
