Is there anything better than a delicious homemade granola bar?
I was craving something sweet the other day and came up with this no-bake bar using simple ingredients I found in my pantry. I shared it as part of my monthly *newsletter as the featured recipe of the monthbut I couldn't stop there, I had to post it here as well.
Keeping in mind that August tends to be a month where we are all on the go. We need an easy to make fuss-free travel snack to energize us through the day and keep us happy.
Perfect paired with a mug of hot tea, excellent road trip food, pre/post workout bar or a sweet treasure to stash in your purse for an afternoon snack break. Enjoy. Please let me know what you think.

Almond Butter Chia Seed Bars
Preparation Time: 5 minutes
Cook Time: No Bake
Serves: 12 bars
18-20 pitted dates, soaked in water for 10-15 minutes
1 cup old fashioned or quick cook oats
1 cup of almond flour or almonds
1 cup of unsweetened shredded coconut
½ cup of almond butter
2-4 tablespoons of water, (if needed) 1 tablespoon at a time
2 tablespoon of chia seeds
2 teaspoon of vanilla
pinch of sea salt
optional add in’s: dried raisins, cranberries, blueberries, mini chocolate chips
Line an 8x8 brownie pan with wax paper or parchment paper. Set aside.
Combine the dry ingredients in a food processor; oatmeal, almond flour, coconut, chia seeds and sea salt.
Pulse until they are combined to a fine course meal.
Next add in the almond butter and pulse again.
With the top on the food processor, drop the soaked dates into the almond mixture a few at a time. Pulse until mixture is combined. Add water 1 tablespoon at a time, if needed to form a moist dough.
Transfer dough into the prepared pan and press firmly down spreading the dough out evenly.
Chill the bars into the fridge and/or freezer for 20-25 minutes, until firm.
Lift parchment paper and dough onto a cutting board and cut bars.
Keep bars in a sealed container, chilled in fridge to enjoy any time of day.
