Have no fear, I'm here to help. Today you will find five simple ways to add in more salads and veggies into your life and keep things easy.
Here's to a healthier you and less confusion.
1. Don't overthink it.
If it's real...eat it. That's it. Somedays my side salad (no recipe insight) is literally a handful of greens I grab from the box like claw crane from the arcade. Just put it on your plate, smile and chew.
2. Use what you have on hand.
You already paid for it so dig into your veggie bin, see what's good and chop it up. Sometimes you can create something delicious with a few leftovers like stir-fried veggies, rice and/or toasted nuts and raisins.
3. Layer it on.
Visually our eyes go for food that looks good. So layering your ingredients in a thoughtgul way is a wonderful way to prepare a salad or veggie bowl. Think color, crunch and texture. Get creative and have fun. I always make sure I have some cooked quinoa and/or colorful grapes on hand for added color, flavor and nutrition.
4. Cook once, eat twice.
This rule has saved my so many times. While preparing greens, grains or beans I always batch them and make double. Having already washed greens prepped in the fridge makes for fast, five minute salads. Cooked grains and beans can easily be added to salads or used as part of a healhy meal. Try and make this part of your weekly food preparation and see how it helps pull things together.
5. Shop with your eyes.
This is one of my favorite rules. I love finding the perfect looking veggies in the store or an a farmer's market and deciding then what to do with it. This is a great way to plan out a menu. Have an idea, but use your eyes to see what's the freshest.
