They say it all the time. Keep it simple. Simple, fresh ingredients are always the best.
And you know...it's SO true.
So after a weekend of celebrating July 4th, fireworks and Womens' Soccer...congrats #USA!! This plate of tender mixed greens is just about as simple as you get and easy to prepare. Detox and keep it easy.
Served with a carrot ginger dressing, avocado and ribbons of carrot it's a fresh, summer garden on a plate.
The salad is easy and this dressing was inspired by the Jivamukti Cafe. I ate there a few weeks ago and had a gorgeous salad bowl with this flavorful dressing. I knew immediately I needed to recreate this at home.
Here's my version.
Carrot Ginger Salad Dressing
1-2 carrots, peeled and chopped
1/4 cup of apple cider vinegar
1 tablespoon of fresh ginger, peeled and diced
2-4 tablespoons of water or lemon juice
2 tablespoons of honey
salt and fresh ground pepper to taste
Combine all ingredients in a high speed blender or Vitamix and blend to combine. Dressing should be smooth. Adjust seasoning to your liking. If it is too thick, add in more lemon juice or water.
