This time of year has me devouring citrus. From late winter to spring I think I consume my body weight in the form of oranges. Below you'll find an easy whole food salad dressing that uses this juicy fruit and cashews to create a creamy almost creamsicle-like delight. Enjoy!
Citrus Salad Dressing
makes 1 medium size jar of dressing
1/4 cup of raw cashews (soaked for about 10 mins or longer)
1 or 2 whole oranges, peeled
2-3 tablespoons of white wine vinegar or apple cider vinegar
1-2 tablespoons of maple syrup (optional)
Fresh ground black pepper to taste
Blend all ingredients in a high-powered blender until smooth and creamy. Store in a covered jar in the fridge and enjoy on all your veggies and salad greens.
Chef Note: add water or more fresh orange juice to thin it out to your liking.
